We work directly with a small number of farms — chosen not for yield, but for the complexity their micro-climates introduce into the cherry. Altitude, soil, and seasonal rains do the heavy lifting. We simply don't get in the way.
Every lot is traceable to its farm, its harvest date, and its processing method. Nothing is blended to smooth out what makes it interesting.
